Mutton Rogan Josh Recipe
Mutton Rogan Josh, a Kashmiri delicacy is known for its deep red gravy, tender mutton pieces, and rich, slow cooked aroma. The name ‘Rogan’ means oil, and ‘Josh’ means intense heat, together describing a curry that’s hearty, fragrant, and soul-satisfying, perfect for winter evenings or festive tables.
Preparation
Prepare the Mutton
- Wash and pat dry the mutton pieces
- Keep at room temperature for 20-30 mins before cooking
Preparing the Oil
- In a heavy-bottomed pan, heat cooking oil/ghee until it begins to smoke lightly
- Reduce heat, add whole bay leaves, cloves, black and green cardamom and asafoetida
- Let them splutter for 30 seconds
- Add chopped onions and ginger-garlic paste and sauté till golden
Sear the Mutton
- Add mutton pieces and sauté on high heat for 6-8 mins until they brown slightly on the outside and release their juices
Add the Masala
- Lower the heat to medium-low. Add Johnny’s Mutton Rogan Josh Masala
- Stir well to coat the meat evenly in the Masala
- Cook the meat for 4-5 mins, allowing the oils from the masala to release and coat the pan. Adding masala at this stage lets it bloom in the oil and meat juices
Add the Yogurt
- Lower the flame and slowly add beaten yogurt one spoon at a time, stirring continuously to avoid curdling
- Cook on low flame for 5-6 mins till the yogurt is fully mixed and the gravy is slightly thick
Simmer and Slow Cook
- Add some hot water (depending on the desired consistency). Add salt
- Cover and simmer on low heat for 1.5 hours (or pressure cook – 3/4 whistles). Stir occasionally to avoid sticking
Finishing Touch
- If you need extra colour, add a teaspoon of Kashmiri Red Chilli powder mixed in a tablespoon of warm ghee or oil
- Drizzle on top and let it rest covered for 10 mins
